Why isn’t the traditional tarallo suitable for people with celiac disease?
The classic recipe for the Apulian tarallo is based on wheat flour, white wine, extra virgin olive oil, and salt—a simple dough, but one that relies on gluten for its characteristic crispy and crumbly texture. For those with celiac disease, even the tiniest traces of this flour must be avoided entirely.
How do you recreate the same texture without gluten?
We replace the wheat flour with a specific gluten-free blend (deglutinized wheat starch, buckwheat flour, rice starch), while maintaining the same traditional method: white wine, extra virgin olive oil, and a long, artisanal kneading process. The result is a tarallo with the same crispy, crumbly texture, rough surface, and golden color as the original—not a substitute, but the same Apulian recipe, simply gluten-free.
