Friselle are one of the symbols of summer in Apulia: twice-baked bread, cut in half, that becomes hard and keeps for a very long time—designed specifically to be softened with a little water and topped with fresh tomatoes, extra virgin olive oil, and oregano. A simple yet ingenious dish, created to prevent bread from going to waste. Here in Andria, we make a gluten-free version while staying true to the original preparation and flavor.

Why isn’t traditional frisella suitable for people with celiac disease?

The classic frisella is made from durum wheat bread that is baked, sliced, and then baked a second time—a process that concentrates the gluten rather than removing it. For those with celiac disease, even the bread used to make traditional frisella must be completely avoided.

How do you recreate the same texture without gluten?

We replace wheat flour with a specific gluten-free blend (deglutinized wheat starch, buckwheat flour, rice starch), while maintaining the double-baking process that gives the frisella its hard, crunchy texture, rough surface, and golden color. Our friselle come pre-seasoned with double-concentrated tomato sauce and oregano, ready to enjoy even without additional toppings.

Where can I find them, and what do they pair well with?

Gluten-Free Friselle are available in the Baked Goods category of our shop. The traditional way to enjoy them: run them under cold water for a few seconds to slightly soften the surface without soaking them, then top with diced fresh tomatoes, a drizzle of extra virgin olive oil, salt, and oregano. They’re also excellent eaten crispy as is, as a base for bruschetta, or served with gluten-free cold cuts and cheeses.
